Sweet-Topped Raspberries
ingredients
- 2 tablespoons orange juice
- 1/2 teaspoon finely shredded orange peel
- 2 cups raspberries, blueberries, or sliced strawberries
- 2/3 cup thawed frozen light or fat-free whipped dessert topping
- 1/3 cup vanilla low-fat yogurt
- Finely shredded orange peel (optional)
directions
- In a medium bowl stir together the 1/2 teaspoon orange peel and the orange juice. Add the berries; toss to coat.
- For topping, in a small bowl stir together the dessert topping and yogurt.
- Divide berry mixture among 4 dessert dishes. Spoon some of the topping over each serving. If desired, sprinkle with additional finely shredded orange peel. Serve at once. Makes 4 servings.
- Make-ahead tip: Prepare fruit and topping mixtures; cover and chill in the refrigerator for up to 2 hours. To serve, assemble as above.
